Quick and Painless Orange Chicken

1 envelope (1-ounce onion soup

1 cup apricot preserves

1 cup Catalina salad dressing

2-3 pounds chicken tenders

Instructions:

Place all ingredients in a slow cooker and stir to coat chicken. Cook on low for 6-8 hours or high for 4-5 hours. If you don’t have a slow cooker, you can also bake in a 9×13 baking dish in a 350 degree preheated oven for 45-60 minutes.

Turkey Noodle Bake

1 ½ pound ground turkey

1 15oz can tomato sauce

1/2 box pasta

1 cup cottage cheese

½ cup sour cream

1 cup shredded cheese

Instructions:

Boil pasta according to directions. While pasta is cooking, brown turkey in large skillet. Drain any fat and add tomato sauce. Season to taste. Add cooked noodles to skillet and combine. Mix in sour cream and cottage cheese. Transfer turkey noodle mixture into 9×13 baking dish. Top with shredded cheese. Bake in preheated 350 degree oven until cheese is melted.

Layered Pizza Casserole

1 bag wide egg noodles

1 jar spaghetti sauce

3 cups shredded cheese

1 ½ pound ground beef

1 package pepperoni

Instructions:

Preheat oven to 350 degrees. Cook noodles according to package directions and drain. While noodles are cooking, brown ground beef in skillet. Drain fat. Spray nonstick oil to 9×13 inch baking dish. Spread thin layer of spaghetti sauce on bottom of baking dish.  Then add half the noodles and top with pepperoni and half of the shredded cheese. Add remaining noodles and remaining sauce. Top with the rest of the cheese. Lay the rest of the pepperoni on top. Cover with foil and bake for 30 minutes. Remove foil and bake another 15 minutes. Let sit for about 15 minutes before serving.

BBQ Style Baked Pork Ribs

1 slab pork ribs

1 tablespoon paprika

2 tablespoons brown sugar

2 tablespoons cumin

Your favorite BBQ sauce

Instructions:

Mix together dry ingredients. Apply to the meat on the ribs. Allow to set for 30 minutes. Place ribs meat side down, wrap in aluminum foil and seal. Bake on a cookie sheet in preheated 275 degree oven for 1.5-2 hours, or until ribs are tender. Remove from oven and let sit for 20 minutes. Increase oven temperature to 350. Open foil and turn ribs so the meat side is up. Baste with BBQ sauce and place back in oven for 20 minutes. Remove from oven, baste again and continue to bake an additional 20 minutes.

Ranch Coleslaw

1-2 package(s) Cole Slaw cabbage

½-1 cup Ranch dressing

Instructions:

Toss ingredients together.  Serve immediately or cover and leave in refrigerator for up to 6 hours. Goes great with the Turkey Noodle bake or BBQ ribs.

Grandmas Potato Bake

1 bag frozen hash browns, thawed

2 cans cream of chicken soup

1 ½ cup sour cream

3-4 cups grated cheese

Salt and pepper to taste

Instructions:

Preheat oven to 375 degrees. Spray 9×13 baking dish. Mix together hash browns, soup, sour cream and 3 cups shredded cheese. Transfer to prepared baking dish. Top with remaining cheese. Bake for 30-40 minutes, until golden brown.

Variation: add pre-cooked chicken strips for a one dish meal.

Asian Broccoli Slaw

1 package broccoli slaw

1 package ramen noodles

3 green onions

1 small package slivered almonds or sesame sticks

1 bottle Asian Sesame Ginger Dressing

Instructions:

Combine all ingredients and allow to sit in refrigerator for a couple of hours to allow the flavors to blend together.
